For the rice bowl

Preparation

  • In a mixing bowl, combine the peeled and deveined shrimp with olive oil, garlic powder, paprika, salt, and pepper. Toss until fully coated.

Cooking

  • Preheat a skillet over medium-high heat. Add the seasoned shrimp and cook for about 2-3 minutes on each side until they are pink and opaque. Remove from heat and set aside.

Assembly

  • In a large bowl, mix together the cooked jasmine rice, diced avocado, halved cherry tomatoes, finely chopped red onion, and fresh cilantro. Gently stir to combine.
  • Drizzle lime juice over the rice mixture and toss gently.
  • Serve the mixture in bowls, topping each bowl with the cooked shrimp. Garnish with additional cilantro and lime wedges.

Notes

For best results, marinate shrimp for at least 15 minutes before cooking. You can also add extra veggies like bell peppers or spinach. For added spice, introduce a pinch of cayenne or chili flakes. Always use ripe avocados for the best texture.
