Dressing Ingredients

  • 3 tablespoons coconut aminos Savory, umami-filled alternative to soy sauce.
  • 3 tablespoons rice vinegar Bright and tangy.
  • 2 tablespoons extra virgin olive oil Brings the flavors together.
  • 1 tablespoon toasted sesame oil Deeply aromatic.
  • 1 clove garlic Infuses the dressing with aroma.
  • ½ inch piece fresh ginger Adds a zesty lift to the salad.
  • ½ teaspoon black pepper For a hint of heat.
  • ¼ teaspoon sea salt Enhances overall flavor.

Instructions
 

Preparation of Dressing

  • Place the 2 pitted medjool dates into a food processor along with the garlic clove and fresh ginger.
  • Blend in the coconut aminos, rice vinegar, olive oil, and toasted sesame oil with black pepper and sea salt until smooth.

Preparation of Vegetables

  • Wash and chop the romaine into bite-sized pieces.
  • Shred the red cabbage and carrots.

Assembling the Salad

  • Combine the chopped romaine, shredded cabbage, shredded carrots, and chicken in a large bowl.
  • Fold in chopped dates, sliced almonds, and green onions.
  • Pour the prepared dressing over the salad and toss thoroughly.
  • Let the salad sit for 5-10 minutes before serving.
  • Garnish with sesame seeds if desired before serving.
