  • 1 cup plant-based milk any variety, such as almond or oat milk
  • 1.5 teaspoons vanilla extract for flavor
  • 1 tablespoon fresh orange zest adds brightness
  • 1 10 oz bag mixed frozen berries, thawed and drained for layering in the casserole

Preparation

  • Preheat your oven to 350°F (175°C) and grease a glass 9x13-inch baking dish.
  • Layer the cubed bread evenly in the prepared baking dish.
  • In a large mixing bowl, whisk together Just Egg, plant-based milk, vanilla extract, brown sugar, and fresh orange zest until smooth.
  • Pour the custard mixture over the bread cubes, ensuring even coverage.
  • Scatter the drained mixed berries over the top.
  • Let the casserole rest for 15 minutes to absorb the custard.

Baking

  • Dot the top with small pieces of vegan butter and bake for 35-40 minutes until golden brown.
  • After baking, let it cool for 5 minutes before dusting with powdered sugar or drizzling with maple syrup.

Notes

For best results, use stale bread as it soaks up the custard better. You may also add spices like cinnamon or nutmeg for extra flavor. Consider using seasonal fresh berries for enhanced taste.
