Preparation

  • Preheat your oven to 425°F and line a baking sheet with parchment paper.
  • Pound the chicken breasts to an even ½-inch thickness using a meat mallet or rolling pin.
  • Set up your breading station with three shallow dishes: beat the egg in one, and mix the Panko, Parmesan, garlic powder, and onion powder in another.
  • Dip each chicken breast first in the beaten egg, letting the excess drip off. Then, press firmly into the breadcrumb mixture.

Cooking

  • Place the breaded chicken on your prepared baking sheet and bake for 20-25 minutes, until the internal temperature reaches 165°F.
  • Remove from the oven, spoon marinara sauce over each breast, then top with mozzarella cheese. Return to the oven for 3-5 minutes until the cheese melts and bubbles.
  • Let rest for 2-3 minutes before serving to help the juices redistribute.

Notes
