For the chicken

  • 2 boneless, skinless chicken breasts (about 1 pound) Juicy and tender, a perfect protein source.
  • 2 tablespoons olive oil For roasting chicken.
  • 1 tablespoon Greek seasoning Flavorful blend of herbs.
  • 1 teaspoon lemon zest Concentrated burst of citrus.

For the pizza assembly

  • 4 naan flatbreads (or pita bread) Soft, pillowy base for toppings.

Instructions
 

Make the tzatziki sauce

  • In a medium bowl, combine Greek yogurt, grated cucumber, minced garlic, lemon juice, dill, olive oil, salt, and pepper. Stir well, ensuring all ingredients meld into a creamy, aromatic concoction. Cover and refrigerate for at least 30 minutes.

Prepare the chicken

  • Preheat your oven to 425°F (220°C). Place the chicken breasts on a baking sheet, drizzle with olive oil, and season with Greek seasoning and lemon zest. Bake for 20-25 minutes or until fully cooked.
  • Once out of the oven, let the chicken rest before slicing or shredding.

Prepare the naan pizzas

  • Brush each naan with olive oil.
  • Spread a layer of tzatziki over each naan, leaving a small border.
  • Layer sliced chicken, cherry tomatoes, bell pepper, red onion, and kalamata olives on top, followed by crumbled feta cheese.

Bake

  • Bake the pizzas in the oven for 10-12 minutes until the edges are crispy and the toppings are warmed through.

Garnish and serve

  • Sprinkle chopped mint leaves, toasted pine nuts, and red pepper flakes on top. Slice into quarters and serve with lemon wedges.

Notes

For deeper flavor, let tzatziki chill overnight. Use fresh naan for the best texture.
