  • 2 cups pistachio ice cream Earthy and nutty, adds a comforting richness.
  • 1/2 cup maraschino cherries, drained Juicy and vibrant, offers a sweet surprise.

Chocolate Coating

  • 1 cup chocolate chips Dark and indulgent, for the luxurious chocolate shell.
  • 1/2 cup heavy cream Silky and rich, enhances the texture of the chocolate coating.

Garnish

  • to taste pistachios, chopped Nutty and colorful, provides a delightful crunch.

Instructions
 

Preparation

  • Scoop a ball of vanilla ice cream using an ice cream scoop.
  • Make a small hole in the center with a spoon.
  • Place a maraschino cherry in the hole.
  • Pack the ice cream around the cherry, ensuring a seal.
  • Freeze the vanilla ice cream ball for about 30 minutes.
  • Scoop a ball of pistachio ice cream around the frozen vanilla ball.
  • Seal the pistachio ice cream well and freeze again for another hour.

Chocolate Coating

  • Melt the chocolate chips and heavy cream in a double boiler until smooth.
  • Dip the frozen ice cream balls into the warm chocolate coating quickly.
  • Return the truffles to the freezer for an additional 30 minutes to set.

Serving

  • Serve garnished with chopped pistachios.

Notes

Allow enough freezing time for best results. Serve with seasonal fruits or warm espresso.
