Instructions

Cook the Rice

  • Fluff with a fork and set aside.

Cook the Protein

  • While the rice is cooking, heat 2 tablespoons of olive oil in a large skillet over medium heat.
  • Add 1 lb of ground beef or turkey and cook until browned, breaking it apart with a spatula—approximately 5–7 minutes.

Add Taco Seasoning

  • Stir in the taco seasoning and cook according to the package instructions, typically adding a bit of water to help the spices adhere to the meat.
  • Mix well and let it simmer for 2–3 minutes.

Combine Ingredients

  • Add the rinsed black beans, corn, and diced tomatoes to the skillet.
  • Cook for an additional 5 minutes until everything is heated through. Stir occasionally to combine.

Assemble the Bowl

  • Divide the cooked rice into bowls.
  • Top with the taco mixture and layer on shredded lettuce, cheddar cheese, and salsa.
  • Garnish with fresh cilantro and lime wedges for added flavor.

Serve and Enjoy

  • Serve warm and enjoy your flavorful Taco Rice Bowl!
