Ingredients

Main Ingredients

  • 1 lb boneless beef steak, diced into bite-sized pieces Use your preferred cut of steak.
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp kosher salt
  • tsp freshly ground black pepper
  • 1 cup prepared white rice Cook according to package instructions.
  • 1 ear fresh corn, kernels removed Or use equivalent in frozen corn.
  • 1 ripe avocado, sliced Choose ripe avocados.
  • ¼ cup fresh cilantro, chopped For topping.

Cilantro Cream Sauce Ingredients

  • ½ cup mayonnaise
  • ¼ cup fresh cilantro, finely chopped
  • 1 clove garlic, minced
  • 1 tbsp fresh lime juice
  • ¼ tsp salt
  • tsp black pepper

Instructions

Preparation of Cilantro Cream Sauce

  • In a small bowl, whisk together the mayonnaise, ¼ cup chopped cilantro, minced garlic, lime juice, ¼ tsp salt, and ⅛ tsp black pepper. Set it aside to allow flavors to meld.

Cooking Rice

  • Cook 1 cup of white rice according to your preferred method, typically taking about 15-20 minutes.

Preparing the Steak

  • In a medium bowl, toss the bite-sized steak pieces with olive oil, garlic powder, onion powder, kosher salt, and black pepper until evenly coated.

Roasting the Corn

  • Heat a large skillet over medium-high heat. Add the corn kernels and cook for about 5-7 minutes, stirring occasionally until golden and slightly charred.

Cooking the Steak

  • Increase the heat to high and add the seasoned steak pieces to the skillet. Cook for about 3-4 minutes, stirring frequently until browned and cooked through.

Plating the Bowl

  • Arrange cooked rice as the base in a serving bowl. Fan out the cooked steak slices on top, scatter the roasted corn and avocado slices, sprinkle with chopped cilantro, and drizzle cilantro cream sauce over everything.

Notes

For enhanced flavor, marinate steak in olive oil and seasonings for at least 30 minutes. For a smoky flavor, grill the steak and corn instead of using a skillet. Store leftovers in airtight containers for up to 3 days. Substitute chicken, shrimp, or tofu for the steak, and use quinoa or cauliflower rice for a healthier option.
