For the sushi stacks

  • 1 cup mashed avocado Provides creaminess.
  • 1 cup diced cucumber Offers a fresh crunch.
  • 1 tbsp fresh lime juice Brightens the flavor.
  • ½ lb cooked shrimp, diced The star ingredient.
  • 3 tbsp mayonnaise Adds a rich mouthfeel.
  • 1 tbsp sriracha sauce Adds a spicy kick.
  • 4 tsp furikake seasoning Brings umami depth.

Instructions
 

Preparation

  • Rinse the rice under cold water until the water runs clear.
  • In a saucepan, bring the rinsed rice and 2 cups of water to a boil. Then lower the heat and cover, simmering for 18 minutes.
  • In a small bowl, mix together the rice vinegar, sugar, and salt until the sugar is dissolved.
  • Once cooked, remove the rice from heat and let it cool slightly. Fold in the vinegar mixture.
  • Mash the avocado with lime juice and salt in another bowl.
  • Slice the cucumber and sprinkle lightly with salt. Let it drain for about 5 minutes, then pat dry.
  • In a bowl, mix the diced shrimp with mayonnaise and sriracha until well-coated.

Layering

  • Using a mold, layer the ingredients: start with rice, followed by avocado, cucumber, and shrimp mixture.
  • Press gently to ensure everything holds together.
  • Finish with a sprinkling of furikake seasoning.

Notes

Serve with various dipping sauces like soy sauce or an extra drizzle of sriracha. Consider prepping components in advance for easier assembly.
