Preparation

  • Preheat your oven to 400°F (200°C) to ensure it’s hot enough for baking the chicken.
  • Sprinkle salt and pepper generously on both sides of the chicken breasts, allowing them to absorb the flavor.
  • Heat the olive oil in a large pan over medium-high heat. Add the chicken and cook for 3-5 minutes on each side until they are golden brown.
  • Transfer the seared chicken to a baking dish that has been coated with cooking spray to prevent sticking.
  • In a small bowl, mix together the minced rosemary, melted butter, minced garlic, chicken broth, and lemon juice until well combined.
  • Pour the rosemary sauce generously over the chicken in the baking dish.
  • Place the baking dish in the preheated oven and bake for about 25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  • Once done, spoon the delicious sauce over the chicken for added flavor before serving.
  • Finish your dish with freshly chopped parsley and, if desired, lemon slices and rosemary sprigs for a beautiful presentation.
