Ingredients
  

For the crust

  • 24 cookies Chocolate sandwich cookies Crushed for the base.
  • 6 tablespoons Melted butter To bind the crust.

For the cheesecake filling

  • 16 ounces Cream cheese At room temperature for smooth mixing.
  • 1 cup Granulated sugar
  • 1 teaspoon Vanilla extract Enhances flavor.
  • 2 large Eggs At room temperature.

For the red velvet layer

  • 1 box Red velvet cake mix Plus ingredients as per package (usually water, vegetable oil, and buttermilk).
  • 1 cup Buttermilk Part of the cake mix preparation.
  • 1/2 cup Vegetable oil

For the topping

  • 1 cup Heavy whipping cream To be whipped.
  • 2 tablespoons Powdered sugar To sweeten the whipped cream.
  • 1/2 cup Cookie crumbles For sprinkling on top.

Instructions
 

Preparation

  • Preheat your oven to 325°F (160°C).
  • Line a muffin tin with cupcake liners.
  • In a mixing bowl, combine crushed chocolate sandwich cookies with melted butter and mix until fully coated, then press into the bottom of each liner.
  • In a separate bowl, beat cream cheese and granulated sugar until smooth. Add vanilla and eggs, mixing until combined, then spoon over the prepared crusts.

Baking

  • Bake for 18-20 minutes or until the center is set. Cool completely.
  • Prepare the red velvet cake batter according to package directions and spoon gently over the cheesecake layer.
  • Bake for an additional 15-18 minutes and check the center with a toothpick.
  • Cool in the pan for 15 minutes, then transfer to a wire rack to cool to room temperature, followed by refrigerating for at least 4 hours or overnight.

Serving

  • Whip heavy cream with powdered sugar until stiff peaks form. Pipe onto each cheesecake cup and sprinkle with cookie crumbles.
  • Serve immediately.

Notes

Ensure cream cheese and eggs are at room temperature for a smooth mixture. Using silicone liners can help with removal.
