  • 1 pound Italian sausage (mild or spicy)
  • 12 ounces pasta (spaghetti, penne, or rotini)
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 28 ounces canned tomatoes (crushed or diced)
  • 1 medium onion, diced
  • 4 cups fresh spinach

Preparation

  • Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Drain and set aside.
  • In a large skillet, heat the olive oil over medium heat. Crumble the Italian sausage into the skillet and cook for about 6-8 minutes, or until browned.
  • Add the diced onion and minced garlic to the skillet, sauté for 3-4 minutes until the onions are translucent.
  • Pour in the canned tomatoes with their juices and stir. Let simmer for about 5 minutes.
  • Stir in the fresh spinach and cook until wilted, approximately 2-3 minutes.
  • Add the cooked pasta to the skillet and toss to combine, heating through for an additional 2 minutes.

Notes

For added flavor, consider adding red pepper flakes with the garlic and onion, or fresh basil and parsley as a garnish. A tablespoon of heavy cream can be stirred in for a creamy texture.
