Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, heat olive oil over medium heat. Add the chopped onion and green bell pepper, sautéing until they soften, about 8-10 minutes. Set aside to cool slightly.
  • In a mixing bowl, combine the ground beef, breadcrumbs, egg, Worcestershire sauce, garlic powder, onion powder, salt, and black pepper. Combine thoroughly.
  • Fold in the sautéed vegetables and provolone cheese into the beef mixture.
  • Shape the mixture into a loaf on a lined baking sheet or in a loaf pan.
  • Sprinkle the mozzarella cheese on top of your meatloaf.

Baking

  • Bake in the preheated oven for 45-55 minutes, or until the meatloaf reaches an internal temperature of 160°F (71°C).
  • Let it rest for 10 minutes before slicing.

Notes

To elevate your meatloaf, consider adding diced mushrooms or jalapeños for a kick. A meat thermometer is invaluable for checking doneness.
