  • 2 cloves garlic, minced Infuses depth.
  • 1 pound ground turkey thighs Browns in the skillet.

Seasonings and Garnish

  • 1 teaspoon chipotle or chili powder Adds spice.

Instructions
 

Preparation

  • Heat 3 tablespoons of olive oil in a large skillet over medium heat.
  • Add the diced onions and sauté for about 3-4 minutes until translucent.
  • Toss in the chopped bell pepper and continue cooking for another 2-3 minutes.
  • Stir in the minced garlic and green onion tops (if using) and cook for just 30 seconds.
  • Introduce the ground turkey into the skillet, breaking it up and seasoning with kosher salt and chipotle powder.

Cooking

  • Cook the turkey for about 6-8 minutes, stirring occasionally until browned.
  • Taste your creation and adjust seasoning as needed.
  • Remove from heat and stir in chopped fresh parsley or cilantro.
  • Serve immediately over rice, in tortillas, or in lettuce wraps.

Notes

Serve topped with avocado slices, lime juice, or cheese for an extra touch. Perfect for busy weeknight dinners.
