Preparation

  • Preheat your oven to 325°F (163°C). Preparing the space ensures your cheesecakes bake evenly.
  • Line a muffin tin with cupcake liners for easier serving and perfect portion sizes.
  • In a bowl, combine the graham cracker crumbs, melted butter, and sugar; mix until evenly coated. Press this mixture firmly into the bottom of each cupcake liner and bake for 5 minutes to set. Set aside to cool.

Cheesecake Filling

  • In a large bowl, beat the cream cheese and sugar until smooth, ensuring there are no lumps.
  • Add eggs one at a time, beating well after each addition. Then blend in the vanilla and heavy cream until fully combined.
  • Pour the cheesecake batter into the crusts, filling each liner about three-quarters full.

Baking

  • Bake for 18-20 minutes until set but still slightly jiggly in the center.
  • Cool at room temperature, then refrigerate for at least 2 hours.

Brûlée Topping

  • Sprinkle sugar over the tops and use a kitchen torch to caramelize the sugar, creating a perfect brûléed layer.

Notes

For best results, use room temperature ingredients and take care when using your kitchen torch. If you don't have one, broil the sugar in the oven to caramelize instead. Experiment with flavors by adding lemon zest or chocolate chips to the mixture.
