Ingredients
  

For the Chicken

  • 1 lb boneless, skinless chicken thighs Tender and absorbs marinade well.

For Assembly

For the Tzatziki Sauce

Instructions
 

Marinate the Chicken

  • In a medium bowl, combine olive oil, dried oregano, garlic powder, salt, and pepper. Add chicken thighs and ensure they are thoroughly coated. Cover and marinate for at least 30 minutes.

Cook the Chicken

  • Heat a skillet over medium-high heat. Once hot, add marinated chicken thighs. Cook for 5-7 minutes per side until golden brown and internal temperature reaches 165°F (75°C).

Prepare Tzatziki Sauce

  • In a bowl, combine Greek yogurt, crumbled feta cheese, lemon juice, minced garlic, and a pinch of salt and pepper. Whisk until smooth.

Assemble the Gyros

  • Once chicken is cooked, let it rest for a few minutes before slicing into strips. Take pita bread, spread tzatziki on top, layer with chicken, cherry tomatoes, cucumber, and onion. Roll and serve.

Notes

For extra flavor, add smoked paprika or cayenne pepper to the marinade. Store leftovers in an airtight container for up to 3 days, keeping tzatziki and filling separate from the pita until ready to eat.
