Ingredients
  

For the Chicken

  • 1 pound chicken breast, thinly sliced
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 2 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 teaspoon ground cumin
  • to taste salt and freshly ground black pepper

For the Tzatziki

  • 1 cup thick Greek yogurt
  • ½ cup crumbled feta cheese
  • 1 large cucumber, grated and drained
  • 2 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon extra virgin olive oil
  • to taste salt and pepper

For Assembly

  • 4-6 pieces pita breads
  • 1 small red onion, thinly sliced
  • 2 ripe tomatoes, diced
  • 2 cups shredded iceberg lettuce

Instructions
 

Marinate the Chicken

  • In a mixing bowl, combine the extra virgin olive oil, fresh lemon juice, minced garlic, dried oregano, ground cumin, salt, and freshly ground black pepper.
  • Add the thinly sliced chicken breast to this marinade and ensure it is well-coated. Let it marinate for at least 15 minutes.

Prepare the Tzatziki

  • Grate the cucumber using a box grater and squeeze out excess moisture using a clean kitchen towel.
  • In a medium bowl, gently fold together the Greek yogurt, crumbled feta cheese, drained cucumber, minced garlic, lemon juice, and olive oil. Season with salt and pepper to taste, then refrigerate.

Cook the Chicken

  • Heat a large skillet over medium-high heat and add the marinated chicken.
  • Cook for about 5-7 minutes, stirring occasionally, until the chicken is golden brown and fully cooked.

Warm the Pita

  • Warm the pita breads in a dry skillet for about 30 seconds on each side, or microwave wrapped in damp paper towels for 20 seconds.

Assemble the Gyros

  • Spread a generous amount of creamy tzatziki sauce on each warm pita.
  • Top with the cooked chicken, sliced red onion, diced tomatoes, and shredded lettuce. Fold the pita over the fillings and enjoy immediately.

Notes

For extra juicy chicken, marinate for 1-2 hours or overnight. Customize your gyros with additional toppings like grilled vegetables or olives. Vegetarian options include grilled halloumi or falafel.
