Dry Ingredients

  • 3 scoops PlantFusion vanilla bean protein powder Approximately 90g
  • 1/2 cup old-fashioned rolled oats Approximately 50g
  • 1 tablespoon poppy seeds Approximately 9g
  • 1/2 tablespoon Truvia sweetener Approximately 7g

Wet Ingredients

  • 1 teaspoon fresh lemon zest From 1 medium lemon
  • 6 tablespoons fresh lemon juice Approximately 90mL, from 2 medium lemons
  • 6 tablespoons water Approximately 90mL

Preparation

  • Combine the protein powder, rolled oats, poppy seeds, and Truvia in a large mixing bowl. Use a whisk to evenly distribute.
  • In a separate bowl, whisk together the fresh lemon juice and water until completely combined.
  • Add the lemon zest to the dry ingredients and pour in the liquid mixture. Stir with a wooden spoon until a cohesive dough forms.
  • Let the mixture sit for about 5 minutes to allow the oats to absorb the moisture.
  • Roll the mixture into 12-15 small balls, each about 1 inch in diameter.
  • Place the energy bites on a parchment-lined plate and refrigerate for at least 30 minutes until firm.
  • Store the chilled energy bites in an airtight container in the refrigerator for up to one week.

Notes

Overmixing can lead to denser bites. Use fresh lemon juice for best flavor and don't skip chilling the mixture!
