  • 1 whole whole chicken (approximately 1.5-2 kg) Perfectly sized for roasting.
  • 4-6 cloves garlic, minced Releasing an intoxicating aroma.
  • 1 large lemon, zested and quartered Bringing a burst of tartness.
  • 2 tablespoons olive oil (or melted butter) Enhances the crispy skin.
  • to taste salt and black pepper For seasoning the chicken.
  • optional Fresh herbs (such as rosemary or thyme) To elevate the taste.

Instructions
 

Preparation

  • Preheat your oven to 220°C (425°F).
  • Pat the chicken dry inside and out with paper towels.
  • Season the cavity with salt and pepper.
  • Stuff the cavity with the lemon quarters and any herb sprigs.
  • In a bowl, mix the minced garlic, lemon zest, and olive oil (or melted butter).
  • Rub some of the garlic-lemon mixture under the skin of the chicken breast and spread the remaining mixture over the exterior.
  • Season the exterior with additional salt and pepper.
  • Place the chicken breast side up in a roasting pan and truss the legs together.

Cooking

  • Roast for about 45 minutes, then baste with the pan juices.
  • Continue roasting for another 20-30 minutes, until the internal temperature reaches 75°C (165°F).
  • Remove from the oven and let the chicken rest for 10-15 minutes before carving and serving.

Notes

For added moisture, consider adding a splash of chicken broth to the roasting pan. You can also experiment with different herbs or add vegetables like carrots or potatoes to the roasting pan. Use any leftover carcass to make chicken stock.
