For the Chicken

  • 4 pieces boneless, skinless chicken breasts Patted dry before cooking.
  • 1/2 cup hot honey Adjust amount based on heat tolerance.

For the Bowl

  • 2 cups cooked rice or quinoa As the base of the bowl.
  • 2 cups mixed vegetables (bell peppers, broccoli, snap peas) Chopped into bite-sized pieces.
  • 1/4 cup low-sodium soy sauce For the sauce mix.
  • 2 tablespoons fresh lime juice To balance flavors.

Preparation

  • Gather all your ingredients and chop the mixed vegetables into bite-sized pieces for even cooking.
  • Pat the chicken breasts dry with a paper towel and season both sides generously with salt and pepper for flavor.

Cooking

  • In a large skillet, heat the olive oil over medium-high heat. Once hot, carefully add the chicken breasts.
  • Sear the chicken for 5-6 minutes on each side until they are beautifully golden brown and cooked through. The chicken should register an internal temperature of 165°F (75°C).
  • While the chicken cooks, mix hot honey with soy sauce and lime juice in a small bowl. This will be the delectable glaze for your chicken.
  • Once the chicken is done, pour the hot honey mixture over the chicken in the skillet. Allow it to simmer for the last few minutes, coating the chicken perfectly in the flavorful sauce.
  • Add the mixed vegetables to the pan during the last few minutes of cooking. Toss them gently until just tender, yet crisp.

Assembly

  • Serve the golden chicken over a generous bed of cooked rice or quinoa, and drizzle with any extra sauce from the pan for added flavor.

Notes

For extra flavor, marinate the chicken breasts in the hot honey and soy sauce mixture for 30 minutes before cooking. Top the bowl with toasted sesame seeds or chopped nuts for crunch. Adjust the amount of hot honey based on your heat tolerance.
