Preparation

  • In a mixing bowl, combine diced peaches and 1/4 cup of sugar. Let them sit for about 10 minutes to macerate.
  • In a blender, puree the macerated peaches until smooth. Save some chunks for texture.
  • In another bowl, whisk together heavy cream, whole milk, remaining sugar, vanilla extract, lemon juice, and salt until the sugar dissolves.
  • Gently fold the peach puree and reserved peach chunks into the cream mixture.
  • Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions for about 20-25 minutes.
  • Transfer the churned ice cream to an airtight container and freeze for at least 4 hours.
  • Scoop into bowls and enjoy, drizzling with extra peach puree if desired.

Notes

Store in an airtight container to prevent freezer burn. For softer ice cream, let sit at room temperature for 5-10 minutes before scooping.
