  • 2 large potatoes Starchy potatoes like Russets work best.
  • 1 to 1.5 cups all-purpose flour Adjust based on moisture of potatoes.
  • 1 large egg Helps bind the gnocchi together.
  • to taste Salt Used in boiling and mixing.

Preparation

  • Boil the potatoes until fork-tender in salted water for about 20-30 minutes.
  • Drain and cool slightly, then peel and mash until smooth.
  • Combine the smooth mashed potatoes, egg, and salt in a mixing bowl.
  • Gradually add flour to the mixture until a soft dough forms.
  • Knead the dough gently on a floured surface.

Shaping and Cooking

  • Divide the dough into sections and roll each into a rope, then cut into 1-inch pieces.
  • Press each piece with a fork to create ridges.
  • Boil a large pot of salted water, add gnocchi, and cook until they float, about 2-4 minutes.
  • Drain and serve with sage butter or marinara.

Notes

Use starchy potatoes for fluffier gnocchi. Store uncooked gnocchi in the fridge or freeze them for later use.
