Preparation

  • Heat olive oil in a large pot over medium-high heat.
  • Add the beef chuck roast and brown on all sides for about 5-7 minutes.
  • Add the diced onion, chopped carrots, chopped celery, and minced garlic. Sauté for about 5 minutes until softened.

Cooking

  • Pour in the beef broth, thyme, and bay leaf. Bring to a gentle boil.
  • Once boiling, stir in the pearl barley, reduce heat to low, cover partially, and simmer for about 45 minutes or until barley is tender.

Final Steps

  • Remove the bay leaf, and season the soup with salt and pepper to taste.
  • Ladle soup into bowls and serve hot.

Notes

Consider marinating the beef for extra flavor. For a thicker soup, blend a portion and stir back in. You can add seasonal vegetables for variety.
