Preparation
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, granulated sugar, baking powder, salt, and ground cinnamon.
- In a separate bowl, combine the melted butter, milk, eggs, and vanilla extract. Mix well to ensure all ingredients are fully incorporated.
- Pour the wet ingredients into the dry ingredients and gently stir until just combined. Be careful not to overmix.
- In a small bowl, beat the softened cream cheese with the powdered sugar until smooth and creamy.
- Fill each muffin liner halfway with the batter. Add a spoonful of the cream cheese mixture in the center, then top with more batter to cover the cream cheese.
- Sprinkle the tops with the cinnamon sugar mixture.
Baking
- Bake for 18-20 minutes, or until the muffins are golden brown and a toothpick inserted into the muffin comes out clean.
- Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
- If desired, drizzle with melted white chocolate before serving.
Notes
To enjoy muffins later, freeze in an airtight container for up to 3 months. Reheat in the microwave for about 20 seconds.
