Ingredients
  

Muffin Batter

  • 2 large eggs Binding everything together beautifully.
  • 1 teaspoon vanilla extract For that aromatic sweetness.
Cream Cheese Filling
  • 8 oz cream cheese, softened The gooey center that takes these muffins to perfection.
  • 1/4 cup powdered sugar To sweeten the cream cheese filling.
For Topping
  • 1 tablespoon cinnamon sugar mixture A crispy delight that enhances the muffin's exterior.
  • 1/4 cup white chocolate, melted Optional drizzle for extra sweetness.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, granulated sugar, baking powder, salt, and ground cinnamon.
  3. In a separate bowl, combine the melted butter, milk, eggs, and vanilla extract. Mix well to ensure all ingredients are fully incorporated.
  4. Pour the wet ingredients into the dry ingredients and gently stir until just combined. Be careful not to overmix.
  5. In a small bowl, beat the softened cream cheese with the powdered sugar until smooth and creamy.
  6. Fill each muffin liner halfway with the batter. Add a spoonful of the cream cheese mixture in the center, then top with more batter to cover the cream cheese.
  7. Sprinkle the tops with the cinnamon sugar mixture.
Baking
  1. Bake for 18-20 minutes, or until the muffins are golden brown and a toothpick inserted into the muffin comes out clean.
  2. Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
  3. If desired, drizzle with melted white chocolate before serving.

Notes

To enjoy muffins later, freeze in an airtight container for up to 3 months. Reheat in the microwave for about 20 seconds.
