Ingredients
  

For the Fries

  • 4 medium Russet potatoes Approximately 1.5 lbs
  • 4 cloves fresh garlic, minced
  • ½ cup freshly grated parmesan cheese
  • 2 tbsp extra virgin olive oil
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • to taste Fresh parsley, chopped Optional for garnish

Preparation

  • Preheat your oven to 425°F (220°C).
  • Wash and peel the russet potatoes. Cut them into sticks about ¼ inch thick.
  • Soak the potato sticks in cold water for at least 30 minutes.
  • Drain the potato sticks and dry them thoroughly using a kitchen towel.

Cooking

  • In a large bowl, toss the dried potato sticks with olive oil, minced garlic, kosher salt, and black pepper.
  • Spread the seasoned potato sticks onto a lined baking sheet in a single layer.
  • Bake for 25-30 minutes or until golden brown and crispy.
  • Once done, sprinkle freshly grated parmesan cheese over the hot fries.
  • Optionally, add chopped parsley for garnish.

Notes

Soak the potatoes longer for extra crispiness. You can add spices like paprika for flavor enhancement. Using a mandoline can help cut evenly sized fries.
