  • 2 fillets halibut fillets (6 oz each), skin removed Fresh halibut recommended
  • 1 teaspoon extra virgin olive oil For brushing
  • to taste Salt Freshly ground black pepper to taste
  • 1/4 cup panko breadcrumbs
  • 1/4 cup freshly grated Parmesan cheese Can substitute with Pecorino Romano
  • 1 teaspoon Italian seasoning blend
  • 1 teaspoon fresh lemon zest
  • 1/4 teaspoon garlic powder
  • 1 whole fresh lemon, cut into wedges For serving

Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • Pat the halibut fillets completely dry with paper towels and season both sides generously with salt and freshly ground black pepper.
  • Lightly brush each fillet with extra virgin olive oil on both sides.

Coating

  • In a shallow bowl, combine the panko breadcrumbs, freshly grated Parmesan cheese, Italian seasoning blend, lemon zest, and garlic powder.
  • Press each fillet firmly into the breadcrumb mixture, coating each side completely.

Baking

  • Arrange the coated fillets on the prepared baking sheet, leaving space between them.
  • Bake for 12-15 minutes, or until the fish flakes easily with a fork and the crust is golden brown.

Serving

  • Let the halibut rest for 2-3 minutes before serving with fresh lemon wedges.

Notes

Use fresh halibut when possible. Consider adding fresh herbs like parsley or dill to the breadcrumb mixture for an extra layer of flavor. Substitute with different types of fish like cod or tilapia as variations.
