Preparation

  • Preheat your oven to 400°F (200°C).
  • Toss the halved baby potatoes with olive oil, salt, and pepper in a bowl.
  • Spread the potatoes on a baking sheet in a single layer.
  • Bake the potatoes in the oven for about 25-30 minutes, or until fork-tender.

Cooking the Steak

  • While the potatoes are baking, heat a large skillet over medium-high heat and add 2 tablespoons of butter.
  • Once melted, add the steak bites to the skillet. Season with salt and pepper.
  • Sear the steak bites for about 2-3 minutes on each side until browned and cooked to your liking.
  • Add the minced garlic and rosemary to the skillet, cooking for another minute.
  • Stir in the remaining 2 tablespoons of butter until melted, coating the steak bites.

Serving

  • Serve the garlic butter steak bites alongside the roasted potatoes.

Notes

Use a meat thermometer for perfect steak doneness. Aim for 130°F for medium-rare, 140°F for medium, and 160°F for well done. Other herbs like thyme or parsley can also be added.
