  • 1 tablespoon butter or cooking oil For that golden, crispy fried egg.

Instructions
 

Preparation

  • Heat the butter or cooking oil in a non-stick skillet over medium heat.
  • Crack the eggs directly into the skillet. Cook them for 2-3 minutes for runny yolks, or 4-5 minutes for firmer yolks. Cover the skillet for the last minute to help cook the tops.
  • Season with salt and pepper to taste.
  • Remove the eggs from the skillet once cooked to your liking.
  • Warm tortillas in a dry skillet or microwave.
  • On each warm tortilla, add a layer of shredded cheese. Place a fried egg on top so it melts slightly!
  • Add toppings of your choice to make your taco unique.
  • Fold the tortillas in half to form a taco and serve immediately.

Notes

For extra flavor: try adding a sprinkle of smoked paprika or a dash of cumin while cooking the eggs. If you prefer a bit of crunch, toast your tortillas lightly in the skillet before assembling your tacos. Experiment with scrambled eggs or egg whites for a different twist! For a heat boost, dice some jalapeƱos or sprinkle some chili flakes into the tortillas. Store cooked eggs separately from tortillas and cheese in airtight containers for up to 3 days.
