Crispy Chicken Caesar Sandwich

Ingredients
  

For the Caesar Dressing

  • ½ cup full-fat mayonnaise
  • 3 tbsp Greek yogurt
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 2 tbsp lemon juice
  • ¼ cup Parmesan cheese (freshly grated)
  • 1-2 cloves garlic (minced)
  • ¼ tsp black pepper
  • Pinch sea salt

For the Chicken

  • 5 pieces chicken cutlets see note 1
  • Sea salt to taste
  • Ground black pepper to taste
  • Oil for frying

Breading Station

  • cup all-purpose flour
  • ½ tsp salt
  • ¾ tsp smoked paprika
  • 2 pieces eggs
  • ¼ tsp salt
  • ¾ cup panko crumbs
  • ¼ cup breadcrumbs
  • 1 tsp dried parsley
  • ½ tsp ground black pepper
  • ½ tsp sea salt
  • ½ tsp dried oregano
  • 1 tsp garlic powder
  • ¼ cup Parmesan cheese (freshly grated)

For Assembling

  • 2 pieces romaine hearts (chopped)
  • 1-2 pieces French baguettes
  • Parmesan cheese freshly grated for garnish

Instructions
 

Preparation

  • In a mixing bowl, combine the mayonnaise, Greek yogurt, Dijon mustard, Worcestershire sauce, lemon juice, Parmesan cheese, minced garlic, black pepper, and a pinch of sea salt to prepare the Caesar dressing. Stir until smooth.
  • Take 4–5 tablespoons of the dressing and mix it with the chopped romaine lettuce in a medium bowl. Refrigerate both the salad and the remaining dressing separately.
  • Lay the chicken cutlets on a cutting board. Pound them if uneven and season with salt and pepper.
  • Prepare three shallow plates for breading. Mix flour, salt, and paprika in the first plate, whisk eggs in the second, and combine panko crumbs, breadcrumbs, herbs, and spices in the third.

Cooking

  • Heat oil in a frying pan over medium heat. Bread each chicken cutlet by dredging in flour, dipping in egg, and coating with breadcrumbs.
  • Fry chicken until golden brown on both sides, about 4-5 minutes per side. Drain on a wire rack.

Assembly

  • Slice the baguettes open lengthwise, spread the reserved dressing inside, and layer with chicken cutlets, Caesar salad, and extra Parmesan.
  • Close the sandwiches and serve immediately.

Notes

Consider marinating chicken for extra flavor. You can use different breads or greens to customize your sandwich. The dressing can be made a day ahead.
