Cake Ingredients

  • 1 box white or vanilla cake mix
  • 1 ounce red food coloring
  • 1 ounce green food coloring
  • 1 teaspoon vanilla extract
  • water, oil, and eggs as called for on the cake mix box

Frosting and Decoration Ingredients

  • 2 cups buttercream frosting
  • 1/4 teaspoon peppermint extract (optional)
  • 16 ounces Candyquick chocolate
  • 2 tablespoons shortening (if using regular chocolate)

Preparation

  • Preheat your oven to 350°F (175°C) and line your baking pans with parchment paper and non-stick spray.
  • Prepare the cake batter according to the package instructions and divide the batter into two bowls.
  • Add red food coloring to one bowl and green food coloring to the other. Mix until the colors are bright.
  • Pour the red batter into one prepared pan and the green batter into the other. Bake for 12-15 minutes until done.
  • Allow the cakes to cool completely on wire racks.

Assembly

  • Spread a layer of buttercream frosting on the green layer and place the red layer on top. Chill for 30 minutes.
  • Use a round cake cutter to cut out mini cakes.

Decoration

  • Melt the Candyquick chocolate as per package directions, adding shortening if needed.
  • Pour the melted chocolate over the mini cakes, ensuring they are completely covered. Allow to set before serving.

Notes

To enhance your cakes, measure ingredients accurately and consider adding peppermint extract. Experiment with colors for a fun twist. Ensure cakes are properly cooled to avoid melting frosting.
