  • 1 cup all-purpose flour The base of your popovers, providing structure and a hint of chewiness.
  • ½ teaspoon salt Essential for enhancing the flavors and balancing the sweetness.
  • 1 cup lukewarm milk This helps to create that light texture and rich flavor.
  • 2 large eggs (room temperature) These bring moisture and contribute to the popover’s lift.
  • 2 tablespoons unsalted butter (melted) Adds flavor and richness.
  • 1 tablespoon extra butter for greasing the pan Ensures the popovers don’t stick and adds a lovely buttery flavor.

Preparation

  • In a large bowl, whisk together the flour and salt until well combined.
  • Slowly add the lukewarm milk while whisking constantly to prevent lumps from forming.
  • In a separate bowl, lightly whisk the eggs before adding them to the batter. Mix until just combined.
  • Add the melted butter to the batter and whisk gently until all ingredients are well combined.
  • Allow the batter to rest for at least 15 minutes.

Baking

  • Preheat your oven to 450°F (232°C).
  • Generously grease a popover pan or muffin tin with melted butter.
  • Place the greased pan in the oven for 2-3 minutes to heat it up.
  • Carefully pour the batter into each well of the pan until they are about two-thirds full.
  • Bake for 20 minutes at 450°F without opening the oven door.
  • After 20 minutes, reduce the oven temperature to 350°F (175°C) and continue baking for another 15-20 minutes.
  • Poke a small hole in the side of each popover to release steam during the last five minutes of baking.
  • Remove the popovers from the oven and let them cool slightly on a wire rack. Serve warm.

Notes

For an extra rise, ensure your eggs are at room temperature. You can also incorporate herbs or cheese for a savory twist.
