Preparation

  • In a mixing bowl, cream together the unsalted butter and powdered sugar until fluffy.
  • Gradually mix in the all-purpose flour, cocoa powder, and salt.
  • Add red food coloring to achieve your desired shade.
  • Press the mixture into a 9x13 inch dish and bake for 15-20 minutes.
  • Allow it to cool completely.

Cheesecake Layer

  • In a clean bowl, blend the softened cream cheese with powdered sugar until smooth.
  • Add the peppermint extract and gently fold in the Cool Whip.
  • Spread this creamy cheesecake mixture over the cooled shortbread layer.

Pudding Layer

  • In a separate mixing bowl, whisk together the pudding mix and milk until thickened (about 2 minutes).
  • Stir in green food coloring until you reach your desired shade.
