Chicken

Preparation

  • Chop the chipotle peppers and combine them in a bowl with honey, lime juice, minced garlic, and salt. Whisk until well combined.
  • Pat the chicken thighs dry with paper towels and season both sides with salt and pepper.

Cooking

  • Heat 1 tablespoon of cooking oil in a skillet over medium-high heat until shimmering.
  • Place the chicken thighs skin-side down in the hot pan and cook for 5-6 minutes until golden brown.
  • Flip the chicken and brush half of the chipotle honey mixture over the seared side.
  • Reduce heat to medium and continue cooking for another 6-8 minutes, brushing with remaining sauce halfway through.

Serving

  • Let the chicken rest for 2-3 minutes before serving. Garnish with sliced green onions.

Notes

For a milder version, use fewer chipotle peppers or substitute with smoked paprika. Marinate the chicken for deeper flavor if desired. Use leftover sauce to drizzle over rice or grilled veggies.
