Ingredients
  

For the Marinade

  • 2 tbsp olive oil
  • 2 tbsp fresh lime juice
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • ½ tsp kosher salt
  • ¼ tsp black pepper

For the Steak

  • 1.5 lbs flank steak Bring to room temperature before cooking.

Preparation

  • Remove the flank steak from the refrigerator 15-20 minutes before cooking to allow it to come to room temperature.
  • In a small bowl, whisk together the olive oil, lime juice, chili powder, cumin, garlic powder, salt, and black pepper until well combined.
  • Pat the flank steak completely dry with paper towels, then rub the spice mixture all over both sides of the meat.

Cooking

  • Heat a cast iron skillet or heavy-bottomed pan over medium-high heat until it’s smoking hot.
  • Carefully place the seasoned flank steak in the hot pan and cook without moving for 4-5 minutes until the bottom develops a dark crust.
  • Flip the steak and cook for another 3-4 minutes for medium-rare, or 5-6 minutes for medium, until the internal temperature reaches 130°F for medium-rare.
  • Once cooked, transfer the steak to a cutting board and let it rest for 5 minutes.
  • Slice the steak against the grain at a 45-degree angle into thin strips.

Notes

Marinate the steak for 1-2 hours for enhanced flavor. This recipe can be executed on an outdoor grill.
