For the Peanut Butter Base

  • 1 cup unsalted butter, softened Make sure it's softened for easy mixing.
  • 2 cups powdered sugar
  • 1.5 cups peanut butter Creamy peanut butter is recommended.
  • 1 teaspoon vanilla extract
  • 2 cups crushed graham crackers Can substitute with gluten-free alternatives.

For the Chocolate Topping

  • 2 cups semi-sweet chocolate chips Use high-quality chocolate for best results.
  • 2 tablespoons peanut butter

Preparation

  • Start by lining a 9×13-inch pan with parchment paper, leaving some overhang on the sides.
  • In a large mixing bowl, cream together the softened butter, powdered sugar, and peanut butter using an electric mixer or vigorously by hand until smooth.
  • Pour in the vanilla extract and mix until thoroughly incorporated.
  • Stir in the crushed graham crackers until evenly distributed.
  • Transfer the mixture into the prepared pan and press it firmly into an even layer.

Making the Topping

  • In a microwave-safe bowl, combine the chocolate chips and 2 tablespoons of peanut butter.
  • Microwave in 30-second intervals, stirring in between, until the mixture is smooth.
  • Pour the melted chocolate over the peanut butter base and spread it evenly.

Final Steps

  • Refrigerate the bars for at least 2 hours until set.
  • Using the parchment overhang, lift the bars out and cut into squares or rectangles.

Notes

Serve chilled or at room temperature. Store in an airtight container in the refrigerator for up to 5 days.
