Fruits

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, mix together the flour, baking powder, and salt.
  • In a stand mixer, cream the butter and sugar until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition.
  • Mix in the vanilla extract and sour cream until well combined.
  • Gradually add the dry ingredients to the wet mixture, stirring just until combined.
  • Gently fold in the blueberries and diced peaches with a spatula.
  • Pour the batter into a greased loaf pan, smoothing the top with a spatula.

Baking

  • Bake for 1 hour and 15 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

Don't skip the sour cream for moisture. Consider using whole wheat flour for a healthier option or adding nuts for crunch.
