Ingredients
  

Apple Mixture

  • 2 pieces apples, peeled and cut into small dice Any type of apple can be used; Granny Smith adds tartness.
  • 1 tablespoon dark brown sugar (packed)
  • 1.5 teaspoons ground cinnamon
  • 1 teaspoon butter (melted)

Cinnamon Sugar Topping

  • 0.5 cup dark brown sugar (lightly packed)
  • 2 teaspoons ground cinnamon

Bread Batter

  • 0.5 cup salted butter (softened)
  • 0.5 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract Pure or artificial.
  • 1.5 cups all-purpose flour
  • 2.5 teaspoons baking powder
  • 0.33 cup milk
  • 0.33 cup sour cream
  • 1 pinch salt

Glaze

  • 0.5 cup powdered sugar
  • 1 tablespoon milk
  • 0.25 teaspoon vanilla extract

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Spray a loaf pan with nonstick cooking spray and set it aside.
  • In a medium bowl, combine the diced apples, 1 tablespoon of dark brown sugar, and 1.5 teaspoons ground cinnamon. Drizzle the melted butter over the apples and mix gently until they are well-coated.
  • In a small bowl, mix together ½ cup of brown sugar with 2 teaspoons of ground cinnamon for the layering.

Mixing

  • In a stand mixer or with a hand mixer, cream the softened butter and granulated sugar until the mixture is light and fluffy, about 2-3 minutes.
  • Add the eggs one at a time, mixing well after each addition, then blend in the vanilla extract until well combined.
  • In a separate bowl, whisk together the milk and sour cream until smooth and creamy.
  • In a large bowl, combine the flour, baking powder, and a pinch of salt. Gradually add the dry ingredients to the creamed mixture, alternating with the milk mixture. Mix gently until just combined.

Assembly

  • Spread half of the batter into the prepared loaf pan. Layer it with half of the apple mixture and half of the cinnamon sugar topping. Repeat these layers with the remaining batter, apples, and cinnamon sugar.

Baking

  • Bake for about 50 minutes, or until the bread is golden brown and a knife or toothpick inserted into the center comes out mostly clean.

Glaze

  • While the bread is baking, whisk together the powdered sugar, 1 tablespoon of milk, and ¼ teaspoon of vanilla extract until the mixture is smooth and drizzly.

Serving

  • Allow the bread to cool on a wire rack. Once it’s cooled slightly, drizzle the glaze over the top before slicing and serving.

Notes

For added texture and flavor, mix in chopped nuts like walnuts or pecans, or add raisins or cranberries. If desired, sprinkle coarse sugar or cinnamon sugar on top before baking. Avoid over-mixing the batter for a tender loaf. Using high-quality vanilla extract enhances flavor.
