Ingredients
  

Main Ingredients

  • 1 pound chicken breast, cut into 1-inch pieces 2-3 medium breasts
  • 2 cups fresh or frozen broccoli florets
  • 1 medium zucchini, chopped
  • 1 unit bell pepper (any color), chopped
  • 1 unit red onion, chopped

Seasoning & Oil

  • 2 tablespoons olive oil
  • 1.5 teaspoons garlic powder
  • 1 teaspoon paprika
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon chili powder

Preparation

  • Preheat your air fryer to 400°F (200°C) for about 3 minutes.
  • In a large bowl, combine the chicken pieces with 1 tablespoon of olive oil and all the seasonings (garlic powder, paprika, Italian seasoning, salt, pepper, and chili powder). Mix thoroughly.
  • Add all the chopped vegetables to the same bowl with the remaining tablespoon of olive oil. Toss everything together until the vegetables are lightly coated.

Cooking

  • Transfer the chicken and vegetable mixture to your air fryer basket, spreading it out as evenly as possible.
  • Cook for 12 minutes, then shake the basket or stir the contents with a spatula.
  • Continue cooking for another 8-10 minutes until the chicken reaches an internal temperature of 165°F (74°C), and the vegetables are tender and slightly crispy.
  • Let the mixture rest for 2-3 minutes before serving.

Notes

Serve with quinoa or brown rice for a complete meal. Fresh herbs can enhance flavor and presentation.
